Ingredients
- 1 packet Pumpkin & Chickpea Soup Veg Mix
- 2 tbsp olive oil
- 1 tbsp paprika
- 1 tin chopped tomatoes
- 2 tbsp. honey
- 2 1/2cups vegetable stock
- Salt and pepper to taste
- Crusty bread, for serving
Method
- 1. Heat the olive oil in a large pot. Add the fresh soup mix and sauté until the vegetables begin to soften.
- 2. Stir in the paprika and sauté for another minute to bloom the spices.
- 3. Add the chopped tomatoes, honey, and vegetable stock.
- 4. Cover and simmer gently for about 20 to 25 minutes, or until the vegetables are completely cooked through and tender.
- 5. Season with salt and pepper to taste.
Serve hot with a slice of crusty bread to mop up the delicious broth.
